This challenge was one of the best things I’ve ever done for myself. Feeling healthier this past month happened gradually. The animal products I had been consuming worked their way out of my system so slowly, that while I did notice my stomach felt better, and I had more energy, I don’t think I realized how amazing I felt. It took going back the other way to convince me that being a vegan is worth it. I went back to eating the way I was for jut a day and it was stomach ache, bad skin, and foggy head all over again.

“Worth it” is actually the wrong term, because I feel like it implies sacrifice, and I don’t think I am sacrificing anything. It’s so easy to get into food ruts and depend on certain ingredients or variations of the same ingredients for everything, but all it is is a rut. Cooking without depending on cheese or meat helped me boost my creativity in the kitchen. I’ve been experimenting with new textures and flavors, and new ingredients. It’s been fun and fulfilling. I’ve been cooking more things from scratch which is definitely more cost efficient (and tastier I think).

I have been using a hint of pecorino here or there, and I did have cream in my coffee once, but I don’t think I’ll ever go back to the way I used to eat. I couldn’t do that to myself.
